A Healthy Sweet Treat

Ahh!  The Challenges of being a mom to a picky eater and a Woman with a sweet tooth.  Anyone feel my pain?  It can be so tough to get little ones to eat veggies or to find something healthy to satisfy that sweet tooth.  In search of an option for myself, I came up with this.

Now I am a sucker for cinnamon so this was great for me.  Cinnamon Carrots and/or sweet potatoes! 

All you need

  • Farm Fresh Butter or Earth’s Balance (Can use Coconut Oil too)
  • Honey
  • Cinnamon 
  • 2 Sweet Potatoes or 4 Carrots.
*When is comes to honey you always want to use Local honey, however if you cant get local Honey this is a great alternative, Organic Honey

How to Make

  1. Place 1 TBSP Farm fresh, Earth’s Balance Butter or Coconut Oil and ¾ TBSP Honey in sauce pan.
  2. Once they begin to melt together add ½ TBSP Cinnamon. Mix together.  I love to use my Bamboo Spoons! 
  3. Take Sweet Potatoes or Carrots out of the oven and pour sauce over them. Mix together making sure to cover the entire dish.
  4. Place back in the oven for 7-15 minutes. Time depends on how soft you want them to be and Potatoes tend to take a bit longer. 
  5. Let cool for a few minutes and Enjoy!

This was a hit with the little one.  And he had no idea it was veggies! Score for Mommy!
