Rainbow Omelet

Breakfast is one of the most important meals.  It can also be difficult to find something tasty and healthy that starts your day off right.  Ever since finding out I was pregnant I have been trying to figure out a way to get veggies as often as possible.  And of course to eat the Rainbow Daily.  So I came up with my Eat the Rainbow Omelet!  I know Eggs can be controversial.  Here is my take…Buy Farm Fresh Pasture raised Eggs.  This will ensure chemical free and nutrient packed eggs.  You can totally see the difference when you crack open a farm fresh egg versus a store bought egg, the coloring is so cool.

Anyway enough about eggs here is what you need…

  • Two eggs
  • Handful of Spinach
  • Two slices of Yellow Pepper
  • Two slices of Red Pepper
  • Three thin slices of Red/Purple Onion
  • Avocado – optional
  • Add cheese if you desire

Throw it together…

  1. Heat your pan to a little above medium heat. Scramble your eggs, grease your pan with natural butter or oil.
  2. Pour eggs into pan and allow to cook on side 1 about two minutes. Then flip and cook side 2.
  3. Once both sides are cooked add veggies to half. If you are including cheese add cheese before veggies.
  4. Then fold other half on top and Voila, You have your Rainbow Omelet!
